Eustace

Eustace is a forename for males. It is a French version of the Greek names recorded of an early Christian martyr of whom there is no evidence, beyond the "historically worthless legend" (Farmer, 2011): Eustakhios and Eustathios.

• The saint is recorded in Latin as Eustatius, after whom an island in the Leeward Islands is named. His name is also given in French as Eustache, which is used as a surname by, amongst others, Bartolomeo Eustachi, or Bartholomaeus Eustachius, (c.1500–1574), the celebrated anatomist who first described the adrenal glands, the eustachian valve inb the heart, and the eustachian tube in the ear.
